Finca Don Jaime, owned by Jaime Guevara, is a 6-manzana farm in Chalatenango, El Salvador, where he grows Pacamara, Pacas, SL-28, and Gesha varieties. Jaime, who has worked in coffee for nearly 20 years, considers growing coffee his life's passion. His son’s promise to plant a coffee tree on his grave is a compliment he cherishes. Though natural-process coffees are relatively new in El Salvador, they are gaining popularity; ripe cherries are meticulously sorted and dried on raised beds or patios for over a month. Chalatenango, known as the “valley of water and sand,” became a focal point for specialty coffee after a Pacamara from the region won the 2007 Cup of Excellence. Conscious Cup purchased that winning lot and has since cultivated lasting relationships with Chalatenango producers, honoring the region's significance to specialty coffee.
