Colombia, Manos Juntas

Cauca, Colombia

Intense jammy cranberry, Kahlua, and chocolate with mellow sugary sweetness and a vibrant, winey acidity.

This naturally processed coffee is bold, expressive, and deeply layered. Ripe fruit character leads the cup, with rich cocoa and liqueur-like sweetness creating depth and balance. The extended fermentation and slow drying bring clarity to the fruit notes while maintaining a smooth, rounded body.

Careful anaerobic fermentation enhances the coffee’s complexity, amplifying its jammy sweetness and wine-like acidity without overpowering the cup. The result is a coffee that is lively yet approachable, with a clean finish and lingering chocolate notes.

Bean Origins

This natural process coffee comes from Manos Juntas Micromill in the Sotará area of Colombia’s Cauca region. Operated by our exporting partners at Banexport, Manos Juntas was created to simplify processing for producers while elevating quality, consistency, and traceability.

Cherries are delivered on the day of harvest, then fermented anaerobically in sealed tanks for five days. Fermentation is carefully monitored using Brix and pH measurements before being halted at peak flavor development. The cherries are then slowly dried in solar dryers over 30 to 45 days, allowing the fruit-forward character and depth to fully develop.

By managing processing and drying centrally, Banexport allows producers to focus on healthy coffee production while receiving upfront payment at prices well above market value. The result is a coffee that reflects both thoughtful innovation and deep respect for the people behind it.
