Hario V60

The Hario pour over is a tried and true brewing method with incredible versatility. There are hundreds of different “recipes” to elevate your particular coffee. At Conscious Cup, we play around with a lot of variations on the brewing method when we taste and practice brewing theory at the coffee lab. At the cafes, we use one method with some small changes in variables between the different coffees. This is a consistent and balanced approach to the Hario that will highlight sweetness and clarity in the coffee.

What you'll need

  • Hario V60, Filter, and Server
  • Grinder
  • Scale
  • Gooseneck Kettle
  • Clean spring or filtered water (450g)
  • Conscious Cup Coffee (30g)

Directions

  1. Pre-wet your filter and vessel with hot water to warm everything up and rinse away any paper taste. Discard the excess water.
  2. Grind 30 grams of coffee on a medium to fine setting. This is called the dry weight (the weight of the ground coffee). The grind size should be about the size of sugar.
  3. Tare your scale so it reads zero with the V60 and coffee on it.
  4. Start your timer and pour roughly double the dry weight (60g in this case) of water over the coffee grounds, beginning in the center of the divot and moving outward in a circular motion. This is called the bloom, and it allows the coffee to release CO2, making way for better extraction. Wait 30 seconds.
  5. Gently agitate the V60 to ensure all the coffee grounds are saturated.
  6. After 30 seconds, begin pouring again, starting in the center and using a slow, steady rate. Move in circular motions, counter-clockwise in the direction of the cone ridges, from the center to the edge and back to the center.
  7. Pour until your water weight reaches 450g. Try to finish in the center of the slurry, ensuring that the volume of water brings the slurry near the top of the V60 filter.
  8. After a few seconds, the slurry will recede slightly. Agitate the slurry by gently swirling the V60. This will help any grounds stuck to the sides fall back into the slurry, promoting even extraction and enhancing the body.
  9. Allow the coffee to finish dripping. The coffee bed should be level and flat.
