Chemex

The Chemex is a classic and elegant brewing method known for producing a clean and flavorful cup of coffee. At Conscious Cup, we appreciate the Chemex for its ability to highlight the subtle nuances and complexities of our coffee. Below is a guide to brewing with the Chemex that will bring out the best in your coffee.

What you'll need

  • Chemex, Filter, and Server
  • Grinder
  • Scale
  • Gooseneck Kettle
  • Clean spring or filtered water (750g)
  • Conscious Cup Coffee (45g)

Directions

  1. Pre-wet your Chemex filter with hot water to warm up the vessel and rinse away any paper taste. Discard the excess water.
  2. Grind 45 grams of coffee on a medium-coarse setting. This is called the dry weight (the weight of the ground coffee). The grind size should be similar to kosher salt.
  3. Place the ground coffee into the Chemex filter and create a small divot in the center of the grounds. This will help ensure even saturation during the bloom phase.
  4. Tare your scale so it reads zero with the Chemex and coffee on it.
  5. Start your timer and pour roughly double the dry weight (90g in this case) of water over the coffee grounds, beginning in the center of the divot and moving outward in a circular motion. This is called the bloom, and it allows the coffee to release CO2, making way for better extraction.
  6. Gently swirl the Chemex to ensure all the coffee grounds are saturated. Wait 30-45 seconds.
  7. Begin pouring again, starting in the center and using a slow, steady rate. Move in circular motions from the center to the edge and back to the center.
  8. Pour until your water weight reaches 750g. Try to finish in the center of the slurry, ensuring that the volume of water brings the slurry near the top of the Chemex filter without going beyond the glass rim.
  9. After a few seconds, the slurry will recede slightly. Agitate the slurry by gently swirling the Chemex. This will help any grounds stuck to the sides fall back into the slurry, promoting even extraction and enhancing the body.
  10. Allow the coffee to finish dripping. The coffee bed should be level and flat.
