Chiapas, Mexico
Since the mid-2010s, Conscious Cup has sourced coffee from Chiapas, Mexico, specifically from the cooperatives Finca Triunfo Verde (FTV) and Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH), through our importer, Cafe Imports. These cooperatives commercialize their coffee through a third party, focusing on producing high-quality coffee year after year. Chiapas, near the Guatemala border and Huehuetenango, offers ideal conditions for coffee production, including heirloom varieties like Bourbon and Typica, high altitudes (1200–1750 masl), and dedicated growers. Cafe Imports and the cooperatives have invested in a quality-control program to enhance cup quality. CESMACH, with nearly 500 active members, is managed by the quality-focused Sixto Bonilla, who empowers the cooperative community to improve coffee quality. The farms of CESMACH and FTV are in the buffer zone of El Triunfo Biosphere Reserve, featuring Mesoamerica's largest cloud forest and a protected environment for numerous plant and animal species. All coffee produced here is shade-grown.
This seasons coffee from Mexico, El Triunfo is another testament to their dedication, featuring balanced notes of caramel, citrus, and orange, celebrating the rich heritage and meticulous care of these growers.
Chiapas, the southernmost region of Mexico, is characterized by mountains that extend into Guatemala, forming part of the tropical forest protected by the Triunfo Biosphere Reserve. This area, humid and tropical, is home to small communities of coffee producers who have formed cooperatives to gain stronger representation in the coffee market. These producers take pride in their land, growing coffee organically using methods passed down from generation to generation.
