Don Sabino Micromill is a father-son project dedicated to producing exceptional coffees under seemingly “simple” conditions. This delightful coffee offers a bright and sweet profile with flavor notes of praline, chocolate, and fruity undertones.


Although the Don Sabino Micromill was established in 2011, Steven Vargas and his father have been involved in coffee their entire lives. They own several plots of farmland in the area, growing a variety of different coffee types. In the mill’s early years, the Vargas drying beds were filled only with Naturals, but recently, Steven has started experimenting with a small amount of Honey coffee.

The Central Valley of Costa Rica is the epicenter of the country’s coffee industry. Its high elevation, consistent weather, frequent rains, and volcanic soil enable a diverse array of coffee offerings from this region. Producers here often cultivate traditional hybrids and employ some of Costa Rica’s most advanced processing techniques.
